You guessed it, this weeks blog post is a recipe! Are you ready for some Oreo Cupcakes?

So one of my favourite youtubers Tanya Burr posted video in which she made these cupcakes, so I had to try them out. I made them first a couple of months ago, and everyone including myself loved them. I decided to make them again and post the recipe for you guys.

Ingredients for the cupcakes:

175g of unsalted butter (I always use Stork for my baking)

165g of caster sugar

125g of self raising flour

40g of Cocoa powder

1tsp of baking powder

3 eggs

Ingredients for the icing:

100g of unsalted butter

200g fo icing sugar

One pack of Oreos

Firstly, you need to preheat your oven at 180°C and line your cupcake tin with 12 cupcake cases.

Now to begin with, add you butter into a bowl and whisk it (I think it makes the butter fluffier and mixes nicely with the other ingredients). You can also do this with a wooden spoon if you don’t have a whisk.

Then add the caster sugar, and whisk again.

Once that’s mixed in, crack in your eggs. If you prefer, you can mix your eggs in a bowl separately and add them in that way.

Whisk until they are all mixed in well.

Then you start adding your dry ingredients, firstly add half of your self raising flour (if you add it all in at once, it gets a bit too much and it will just be messy, believe me on this one). Then add the other half of the flour and your tsp of the baking powder.

Then lastly, you add in your cocoa powder.

Then have a sniff, smell the chocolaty goodness (optional procedure)

Your mixture for your cupcakes is complete!! Yay, pat yourself on the back!

Get your cupcake baking tin and add a dollop of the mixture into each case. Do try to do these evenly as you don’t want some to burn and some not to cook.

Once that’s done, place them in the oven for approx 12-15 minutes.

After 12 minutes, just check to make sure you don’t leave them in the oven for too long. You can just get a knife and put it in the cupcake and if it comes out clean they are ready, but if it comes out with cake mixture then they need another couple of minutes.

Now that your cupcakes are done, leave them on a cooling rack to cool.

It’s time for the icing/frosting now!

Again, like before add the butter into a bowl and whisk (I actually did this with a wooden spoon).

Once its fluffy, add your icing sugar, half at a time until mixed properly.

You might want to give up, but you must carry on!

… and eventually you will see this gorgeous, yellowy smooth mixture of hope!

Then you need to crush half of the Oreos, you can do this in a food processor or put them in a bag and cover with a kitchen towel and bash them with a rolling pin (go crazy).

Then add in the crushed Oreos and mix it in.

So to decorate and ice your cupcakes, wait until they have completely cooled down. Then with a knife just add icing on the top (don’t worry the messier it looks the better).

Then lastly, for the finishing touch add half an oreo on top.

You, my friend, have now mastered CupcOREO’s!

Hope you enjoyed this weeks post.
